Why do light bulbs have to be so complicated? I almost always buy the wrong light bulbs because I never know what to look for on the box. Tell me I’m not alone there. Normally I don’t think much about light bulbs, that is, until one needs to be replaced. And now the lights in the living room are too bright for what I really want. Which led me to doing the super boring, grown-up thing… researching light bulbs.

Why are there so many options? From size and style to wattage and of course color. But even beyond that you have to know the numbers too, which I didn’t until this weekend. At least now I’ll know what to look for when I need new bulbs… which is pretty much now since I can’t handle bright white bulbs in a room that should otherwise have a warm and cozy feel.

Hopefully that’s the last time I ever talk about light bulbs but I’m not making any promises.

It’s kind of strange to be posting yet another ice cream recipe on a snowy day, but with Valentine’s day less than a week away, it needed to be shared sooner than later… because it needs to be part of your plans. If not for Valentine’s day, definitely for your post Valentine recipe plans.

Whether you make red velvet cake or cupcakes for the sole purpose of making this ice cream or you have leftover cake or cupcakes and want something fun to do with them… besides the obvious, eating them as is. That gets boring, right? It must.

So, make cake and frosting fresh, or save your leftovers and whip up this crazy delicious ice cream!

Red Velvet Cake Ice Cream

Creamy homemade vanilla ice cream with chunks of moist red velvet cake throughout and swirls of cream cheese frosting.

Ingredients:

Ice cream:
1C whole milk
2C heavy cream
3/4C granulated sugar
Pinch salt
1 1/2 tsp vanilla
5 egg yolks

1C red velvet cake cubes

Frosting:
2oz cream cheese, softened
1 Tbsp unsalted butter, softened
1C powdered sugar
1/4 tsp vanilla extract
1 Tbsp heavy cream

Directions:

Add 1 cup heavy cream to a large bowl with a mesh strainer on top.

To a small saucepan, add remaining heavy cream, whole milk, granulated sugar, salt and vanilla. Cook over medium heat, stirring to dissolve sugar. When mixture begins to steam, slowly pour 1 cup hot milk mixture into egg yolks, while whisking continuously. Pour egg mixture into saucepan, stir to combine. Continue cooking over medium heat until mixture coats the back of a spoon or spatula.

Pour egg mixture through mesh strainer into reserved heavy cream. Stir and cool to room temperature over an ice bath. Cover and chill thoroughly, roughly 4-6 hours.

Meanwhile, prepare red velvet cake (or cupcakes) as directed. Chill cake overnight.

When ready to proceed, slice 1 cup worth of cake into 1-inch cubes. Place on a baking sheet and freez for 30 minutes.

Churn ice cream according to manufacturer's directions.

Meanwhile, prepare frosting. In a medium bowl, beat together ingredients with a hand blender until smooth. Transfer to a piping bag or plastic bag, fit with a round tip.

In a freezer safe container, create layers of ice cream, red velvet cake cubes and frosting. Alternate layers and gently swirl if desired. Freeze until firm, at least 4-6 hours or overnight.
